This manual is to provide guidelines for selecting and training members of discriminative and/or descriptive sensory evaluation panels. The procedures in this manual may be applied to discrimination and descriptive test methods that use the human senses – taste, sight, touch, hearing, and smell – as measuring devices. Last published in 1981, this classic reference book is now updated as a manual with methods reflecting current best practices and updated references. It also contains additional information on standing panels, episodic panels, integrating new panelists into existing panels, refreshing panels, retaining and dismissing panelists, and information on quality control panels.
