A process used to concentrate orange juice and other citrus juices by using an APV Gaulin homogenizer within the T.A.S.T.E. Evaporator. The purpose of this process is to reduce viscosity, eliminate defects, reduce bottom pulp, increase yields, and provide for a smoother operation of the evaporator, subsequent to homogenization. This process, equipment and benefits are the basis of U.S. Patent #4,886,574 issued September 5, 1989, and application #339,171, pending.
